Chocolate is something most of us enjoy, but few of us stop to think about how it comes to be. Behind every glossy truffle or perfectly snappable chocolate bar lies a fascinating journeyfrom cocoa pods and fermentation to tempering and craftsmanship. At Jus'Trufs', we run interactive chocolate tours where that journey comes to life through an experience that's equal parts education, creativity and, of course, indulgence. Recently, we hosted a fun Fathers Day event at the Jus'Trufs events space in Jakkura chocolate tour for fathers and kids. The session offered an opportunity to experience chocolate beyond the wrapper, while providing a hands-on introduction to the science (and fun!) behind artisanal chocolate. We began where every chocolate story should: at the cocoa pod. Participants were introduced to the complete bean-to-bar process, from learning how cocoa beans are harvested, fermented and transformed into cacao nibs, cocoa powder and cocoa butter. Along the way, our team demystified one of chocolate's most common questionswhat really distinguishes dark, milk and white chocolate. Sampling cacao nibs and cocoa butter helps guests understand how individual ingredients contribute to the flavour, aroma and texture of the finished product, creating a richer appreciation for every piece of chocolate. While the theory of it all was woven into questions and answers, the live tempering demonstration was a highlight, where participants rolled up their sleeves and worked with melted chocolate themselves. Guided by the Jus'Trufs team, and Master Chocolatier Chenddyna Schae, guests learnt why temperature plays such a critical role in creating chocolate with a beautiful sheen and satisfying snap. For those keen to recreate the process at home, the workshop also shared practical tipsincluding a simple technique for checking chocolate temperature without a thermometer using the pinky finger knuckle! With the fundamentals covered, it was time to get creative. Participants handcrafted their own filled chocolates using an assortment of freshly prepared ganaches (chilled in the fridge, after we created them), exploring how different fillings create distinct flavour profiles. We provided printed recipes during the session, to make it easy to continue experimenting long after the workshop ends. The creativity continued as each table collaborated on decorating a chocolate bar with a selection of toppings, including toasted nuts, dried citrus peel, cranberries and raisins. Every creation was unique, reflecting the personalities and preferences of the people making it. And to wrap the session, everyone took home what they created!
